Over Night Peanut Butter Oats Recipe

Guys, I just made the most amazing over night oats recipe. I had a request to make peanut butter cookies yesterday. I do not bake often so I obliged. The dough was sadly fantastic and the cookies even better. I only had one cookie but unfortunately can’t say the same for the dough. I had a super lean dinner (tilapia with mango salsa) so I am telling myself it all evened out. Yes, it did. I ended up with an empty jar of peanut butter so I decided to make some overnight oats.

Before I share the recipe with you, let me address the issue I have with peanut butter. I LOVE peanut butter but most brands are filled with JUNK. Please read labels when buying peanut butter. If you see any oil listed, put that jar back on the shelf. Yuck. Any added sugars? Yep, put that jar back, too. Look for a label that ONLY lists peanuts and salt. If your peanut butter has any other ingredients besides peanuts and salt, it is filled with unnecessary junk. Do not buy those brands!

Making over night oats is so simple and they are a great option for an on the go breakfast. Please try this recipe next time you end up with a nearly empty jar of peanut butter! If you do not use peanut butter, I am sure this recipe would work well for any nut butter.

Over Night Peanut Butter Oats

  • Nearly empty jar of peanut butter (Ok, I added a little pb from my new jar. You probably need about 1- 1 1/2 TBS of pb.)
  • 1/3 cup oats (I used quick oats)
  • 1/3 cup milk (your choice- I used almond)
  • 1 tsp chia seeds
  • 1/2 over ripe banana, mashed
  • 1/2 tsp cinnamon

Stir all of the ingredients together, replace the lid and then refrigerate over night. That is it. Simple and delicious! I do not have the nutritional information for this recipe as I made it up myself last night. It is high in calories BUT they are GOOD calories! It is a filling breakfast so I consider it a much better option than a bowl of empty calorie cereal. It is also filled with clean ingredients. It would also be a great post work out snack!
