Oatmeal Banana Nut “Cookies”

You may have noticed I am not usually the recipe poster of the two of us.  That is because if it isn’t easy, I’m not making it.  My “clean” meals are also usually really, really boring.  I recently saw the following recipe in a local Neighborhood Wellness facebook group.  It met all of my cooking and eating requirements — healthy ingredients and easy.  I made these today and had to share with you!

Oatmeal Banana Nut “Cookies”

2 over-ripe bananas, mashed

1 cup of oats (I used gluten-free, organic oats)

1/2 cup of walnuts

Mix all ingredients together.  Bake on a cookie sheet at 350 degrees for 15 minutes.

That is IT! My one tip would be after forming them into cookie shaped balls on the sheet, pat them down a little bit.  They did not “flatten out” like normal cookies would.  I actually patted them down with a few minutes left when I noticed this.

These hit the spot for a slightly sweet treat, but I also may use them for a quick, easy pre-run breakfast option.  I made a few of them without the walnuts to share with a friend that prefers things nut-less. They seemed to come out just as well. I personally like them with the walnuts for the healthy fats, but it is good to know they have that option for anyone with an allergy (pr preference).  I will definitely be making these again!
